Friday night, this happened…
Yesterday, I mentioned that on Friday I had a pound of bacon, intended for something else, that I used to make a fingerfood-snacky-appetizer thing. The thing was soooo delicious that I can’t even remember what I was going to use the bacon for in the first place.
Also, this is like Rumaki, but different. I call it RuMOCKi…cause it’s like a mock rendition of real Rumaki. If you’ve never had Rumaki, it’s chicken livers (yuck, I use chicken breast), with water chestnuts, wrapped in bacon, soaked in soy sauce and brown sugar. It’s yum. My BFF makes it. I request it all the time, Christmas get-togethers, parties, Tuesday afternoons…it’s soooo good.
And this is where I got this idea…admit it, anything wrapped in bacon is going to be outstanding!
You’ll need this stuff:
Bacon, Pineapple Chunks, Toothpicks, Brown Sugar, Soy (or Teriyaki) sauce. I only had Teriyaki on hand. Either is perfect, Teriyaki just adds more sweetness. Preheat your oven to 375°
This is so incredibly easy, but messy. Prepare to be messy!
Cut the bacon in thirds…like this:
Take a slice and wrap it around a pineapple chunk and secure with a toothpick:
For me, there was exactly enough bacon to match the number of pineapple chunks…love when that happens! If it doesn’t work out that way for you, you can just cook the extra bacon or eat the extra pineapple chunks.
Put your wrapped creations into a large bowl and pour your sauce (soy or terikayi) over them. I don’t measure, I just pour enough that they are barely covered, as you are going to toss them a bit to be sure they are all coated.
Now, you can either roll them in brown sugar, which is messy or you can do what I did, I put my sauce soaked wraps on a cookie sheet and then sprinkle them with brown sugar.
Bake them for about 30-40 mins or until they are nice and browned and bubbly and, and ooey-gooey. Really keep an eye on them because they will burn and then not so ooey-gooey!
Take them out and let them cool down. They will be extremely hot!
